How the H_LL did this become a baking.cooking blog. I seriously was the worst chef in the entire world until maybe two years ago when I became locally famous for my apple crisp recipe (which is still a secret).
TODAY. I bring you personal size pumpkin pie.....and pumpkin cake. Or should I say pumpkin bundtini. Sounds better, right?
Inspired by the baking skills of grandma Sharon. Who is a baking extraordinaire and is a PROFESSIONAL personal sized baking chef. So, thank you grandma for your wise skills and adventurous flair.
BUT FIRST. I will update you on my doings. I know I haven't blogged recently. Mostly due to the hectic life of med school, but secondarily because in my non-studying hours I am trying to soak up time with family when home and purkinje when in Roch. I feel so bad when I neglect him.

So the star of the show today is my PUMPKIN BUNDTINI!!!!!
I wanted a pumpkin pie, but I was 1) too lazy to make a pumpkin pie. and 2) didn't want to have to eat the whole pie, because I probably would. and 3) I also wanted pumpkin bread but ...go back to reason 1.
I made super EASY pumpkin guys. What you need is basic baking supplies: flour, sugar, milk, salt, vanilla if you want, one egg, brown sugar if you're lucky, some cinnamon if you like spice, some butter or some alternative if you're healthy, and a can of PUMPKIN.
So, obvi, I live currently with purkinje and he HATES pumpkin. So more for me -- but I made these cute little guys in the microwave in little ramekins. All you have to do is literally throw above ingredients in, and make the texture what you want it to be. Taste testing required.
The trick is this: add more flour and sugar if you want a pumpkin bread. Plus a little baking powder.
Add more milk if you want a pumpkin pie.
PLUS If, like me, you have graham crackers and some butter and brown sugar, you can whip up a little crusty crust to put in the bottom of your ramekin, and VIOLA. you have a legit pumpkin pie that is mini.
So my recipe made four of these guys. Well it would have been four if I didn't eat most of the batter. I actually yielded three. One pie. Two breads.
Add chocolate chips if you are ambitious.
WASNT THAT EASY.
